Proposal
Sub-proposal one: sport=bullfighting for any place where bullfighting is practised.
Sub-proposal two: leisure=bullring for purpose-built bullrings.
Sub-proposal three: whether to apply leisure=stadium to bullrings, too.
rationale
One: Bullfighting needs a tag. If it's similar to the "all sports" proposal, all the better. Bullfighting is considered a sport by wikipedia, so it is reasonable to tag it this way. Please do not engage in flamewars about this issue.
Two: purpose-built bullrings need to be apart from temporary bullrings set up for town festivities. leisure=bullring would be applied only to purpose-built installations. Multi-purpose sites would not have this tag.
Three: leisure=stadium applies to buildings with tiered seating, and big bullrings have tiered seats. For these cases, the stadium tag would be applied to the outer polygon, and leisure=bullring and sport=bullfighting would be applied to the bullfighting arena itself.

In order to be compatible with the "all sports" proposal, the following should be equivalent: sport=bullfighting and sport=bull fighting
