Sorry for lack of reply. I think your aims are possible, but new to OSM myself really.

How big an area are you aiming to cover? Where would the map go? i.e. paper, static website, interactive site like OSM's map

Much of the Leeds map is patchy so that's a limit. But I think there's a way of developing your own map based on the data, so you could add icons for specific facilities. Opening hours is supported, not sure how it would be rendered - again, that would suggest a more interactive map.
