Proposal
I propose to introduce the key pitch:usability=* for sport pitches (leisure=pitch) where usability and joy depend on objective properties of the pitch.
Rationale
There are sports for which the enjoyment and/or performance critically depend on objective properties of the pitch (e. g. table tennis or ice hockey). While there are other sports for which this is not (so much) the case (e. g. trail running), I propose to introduce a generic usability scale for those sports for which pitch quality matters.
This proposal introduces only a generic scale. For each sport for which a such scale makes sense, criteria need to be defined specifically.
For most sports, fully objective criteria will be hard to find. However, openstreetmap has a range of widely-accepted tags that are not fully objective but are considered of big enough usefulness to keep them. Examples are smoothness=*, trail_visibility=* or sac_scale=*.
A simple example for the usefulness of the tag: Many cities contain hundreds of outdoor table tennis pitches, but with very different quality. A pair of friend who want to meet up for a table tennis match in their neighbourhood may want to search online for the best pitch within a given radius instead of checking a dozen of pitches on site before deciding which one to use.
For many sports, playability would be a good description. However, since not all sports are "played", the term usability appears to be more generic and hopefully covers all (or most) sports.

The examples are just for illustration purposes; exact criteria would have to be discussed in sport-specific follow-up proposals.

Deprecation of playability=*
Previously, the key playability=* has been informally introduced by the author of this proposal. Subsequently, it has been pointed out that playability may be confusing for sports that are not considered to be played. Hence, this proposal seeks to introduce the more generic key usability in lieu. Approval of this proposal would deprecate playability=*, which is fortunately not yet in widespread use.
Rendering
The most simple rendering would just ignore the tag. More sophisticated rendering could vary icon size and/or colour saturation depending on the tag value.
Features/Pages affected
playability=* would be superseded by usability=* in case the proposal will be approved. The wiki page sport=table_tennis currently makes use of this key. All occurrences of playability=* therein would need to be replaced by usability=*
