Proposal
Mapping water points, in particular in mountain contexts, could be tricky. Taps shouldn't inherit the name of the spring, so adding spring:name should avoid to put the tag name on such features or limit the use to only existing cases.

Tagging
The new tag doesn't affect existing spring mapping:
natural=spring
+ name=Fonte Coralba
If a water point (may be a pipe or a tap) has spring water (even if you don't know the exact spring position), use:
amenity=drinking_water
+ spring:name=Fonte Coralba
Consider always mapping them as separates elements, even if they are close each other.
