Summary
Many shops offer that but there is no official tagging for this by now.
At the moment (refered on taginfo) "self_checkout=yes" is use 10 times.
The term "checkout" or "check-out" is used for different things so "payment:self_checkout" ist more clear or unique.
Additional
If self checkout is only possible at special times use opening hours: payment:self_checkout:opening_hours=*
