Naming of the key is ambiguous.

The key contact:booking=* is used to define a Booking.com page of an object. The value is the URL (e.g. https://www.booking.com/hotel/COUNTRY/XXX.LANGUAGE.html) or just the useful part of the URL (e.g. COUNTRY/XXX). In most cases, the full URL is used as value but it may be localized in other languages. It is also possible to add just the useful part so that one can see the Booking.com page correctly localized but this requires the user software to add the appropriate URL prefix and suffix.

There is another code, named hotelId, which you can find if you look for hotelId inside the source code of Booking.com page.

This tag is used for Booking.com ID. If you want to tag the contact to book in an hotel you can use either reservation:website=*, website:booking=* or website:reservation=*.
