Please, use surface=paving_stones / surface=sett / surface=unhewn_cobblestone / surface=rock / surface=stepping_stones for surface.

You can put material info into material=granite (paving_stones:material=granite can be also used for surface=paving_stones)

Selecting surface value

surface=rock + material=granite for paths where raw rock is a surface

surface=paving_stones + paving_stones:material=granite for stone machined into a flat surface

surface=sett + material=granite for flattened stone, but still not entirely flat and not covering entire surface

surface=unhewn_cobblestone + material=granite for true cobblestone of natural, uncut, rounded stones

surface=stepping_stones + material=granite for stones or plates individually arranged in a row, allowing to walk on, surrounded by an unpaved medium such as grass or water

surface=stepping_stones + material=granite for grass variant
