Level

In my understanding, it would have sense to set the level of the roof.

For example, in a building with 1 floor, the roof could have the tag level=1.

I think this information is particularly useful to render complex roofs, where some parts are rendered in a specific level, and other parts are in other levels.

Note that 53000 objects have such situations.
