Almost all lakes in OpenStreetMap are tagged with natural=water and optionally with the tag water=lake. See water=* for all values of water areas.

If the water areas are really big, then use natural=coastline to draw them.

A tiny number of lakes is still using natural=lake. Please consider converting them to natural=water.

natural=lake is not rendered any more by the OSM Carto layer on the main website as of v2.28.0 of the openstreetmap-carto stylesheet, but rendered by the default Osmarender rules.
