What about a shop=model selling w:railway modelling? I see no results in taginfo under ":sales" about "trains" or "railway" or "model".

Don't follow this blindly. It's listed by a blocked user promoting own opinion unilaterally.
The usual pattern is shop=model + model=* , but there's problem with bad choice of word causing collision with model-numbers Talk:Tag:shop=model#specifying
