There are various approaches in current use to mapping venues like amenity=restaurant, shop=*, office=*.

Nodes

A lone node node is useful when doing a first pass of the area, when you don't want to spend too much time adding a lot of detail, or you're contributing from a mobile device and just want to get the venue onto the map.

Tagged on the building way

If the venue occupies the whole building, and there are no grounds beyond the building, then you can map the venue tags directly on the building=* way.

As an indoor room within a building

If there are multiple venues occupying a building and you want to do indoor mapping, draw an area representing the occupied premises of the building, within the building.

A way representing the site, grounds or campus

This is useful since it captures all the whole site, including any parking areas.

On the building within a site, grounds or campus landuse

While not preferred, some mappers choose to tag the venue on the main building, and just tag the site, grounds or campus with landuse=*.

A venue occupying an entire floor of the building

If here are multiple venues occupying a building, but the venue occupies one of more whole floors, similar to indoor mapping you can draw new way sharing the same nodes as the building=* for the venue and include the level=* and level:ref=*.
