What kind of shop?
Which kind of shops should get this tag? Big chains like this: Tchibo that don't roast the coffee in place, at the most grind it? Is there a suggestion how to distinguish them? How do we tag places that sell coffee but also offer to consume it in place? E.g. this one (also offering courses to become barista) Coffeestar?
