The key animal=* indicates which animals are present at that location. For example, it can be used in combination with top-level tags like amenity=*, building=*, highway=*, landuse=*.
Some animal-related facilities used to be tagged like with animal=horse_walker and animal=school. (Note that animal=school is in decline and that amenity=animal_training is used more frequently nowadays and therefore recommended).[1]); problem: Homonymous keys
Values
The value should be the common name of the animal. For the scientific name there is the key species=*.
Examples:

The singular form is more common than the plural and is therefore recommended.
Multiple values can be separated with a semi-colon, for example at farm with both foxes and mink animal=fox;mink.
animal=yes is used occasionally, but inconsistently. For venues such as hotels it specifies that pets are allowed, but pets=* and pets_allowed=* are more established. In combination with landuse=meadow and landuse=farmland, it seems to indicate that the land is used for animal grazing, i.e. synonymously with meadow=pasture.

- Livestock building
A building that was built for housing animals and in this example is used to house chickens:

(Note that for certain animals there is already a specific building tag which is recommended, e.g. building=stable, building=sty and building=cowshed).
- Grazing meadow
A meadow used for sheep grazing:
