An apron is the surfaced part of an airport where planes park.
With the increasing use of aerial and satellite imagery in OSM it is now feasible to make reasonable looking maps of airports. Aprons are usually well visible as an area and can be mapped as aeroway=apron.
How to Map
Draw a closed area where all ways run clockwise or counter-clockwise. Add the aeroway=apron to it.
